Tofu Vegetable Salad
A quick and healthy meal for any occasion.

INGREDIENTS
¼ tsp S&B wasabi paste
2 tbsp soy sauce
2 tbsp mirin seasoning
5 tsp rice wine vinegar
⅙ Onion
¼ Apple
3 tbsp olive oil
200g mixed lettuce
1 continental cucumber, sliced
⅓ daikon radish, sliced
1 radish, sliced
½ pack of silken tofu, sliced
30g dry wakame seaweed, rehydrated
½ carrot, julienne
12 cherry tomatoes
METHOD

To make the sauce, mix the S&B wasabi paste, soy sauce, mirin seasoning, rice wine vinegar, onion, apple and olive oil in a food blender until well combined.

Place the mixed lettuce on a serving plate, then top with cucumber, daikon radish, radish, silken tofu, wakame seaweed, carrot and cherry tomatoes on the mixed lettuce.

Drizzle the sauce over the salad to your liking.
