Porterhouse Steak with Wasabi Herb Butter

INGREDIENTS

4 ea 300g Porterhouse Steak

Herb Butter
3 tsp S&B Wasabi in Tube
1 tsp Rosemary, chopped
1 tsp Parsley, chopped
1 tsp Dill, chopped
1 clove Garlic, grated
1 tbsp Soy sauce
1 tbsp Lemon juice
70 grams Unsalted butter, softened to room temperature

METHOD

  1. Place all herb butter ingredients in a bowl and mix well.

  2. Transfer the butter mixture onto a sheet of cling film. Wrap and roll into a cylinder shape, then refrigerate until firm. Once set, cut into discs of your preferred size.

  3. To serve- Cook the steaks to your liking and top with a slice of herb butter. Serve with your choice of garnish.

*Note: Allow an additional 30–60 minutes chilling time for herb butter.
