Steamed Fish with Crunchy Garlic with Chilli Oil

INGREDIENTS
⅓ jar S&B Crunchy Garlic with Chilli Oil Spicy
4 pieces 150g Hapuka or Rockling fillets
⅓ cup Vegetable Oil
to garnish Spring Onion (cut to your liking)
to garnish Red long chilli, julienned
to garnish Coriander leaf
Ingredients A
2 tbsp Leek, chopped
2 tsp Ginger, chopped
4 roots Coriander root, chopped
1 tsp White sesame seeds, chopped
1 tsp Garlic, chopped
1 tsp Lemongrass, chopped
METHOD

Separate the oil from the S&B Crunchy Garlic with Chilli Oil Spicy and set aside.

Combine all ingredients in Ingredients A in a bowl. Place a generous amount of this mixture on top of each Hapuka or Rockling fillet, then place the fillets in a steamer. Steam until the fish is cooked through.

Mix the oil separated in step 1 with the vegetable oil.

To serve, place the steamed fish on a plate, scoop some of the S&B Crunchy Garlic with Chilli Oil Spicy mixture (without the oil) on top, then drizzle with the oil mixture from step 3. Garnish with spring onion, red chilli, and coriander leaves.
